Application of High-Temperature Pneumatic Puffing Technology in the Development of Instant Rice
The Food Industry Research and Development Institute (FIRDI) developed the high-temperature pneumatic puffing technology as part of technological innovations with the support of the Ministry of Economic Affairs, Department of Industrial Technology through Technology Development Programs. The drying process is accomplished by instantly heating granular food products at high temperatures for just a few minutes, allowing them to flow and expand swiftly within the chamber using the high-temperature pneumatic puffing equipment that was created by the institute. This technology's puffing equipment has been granted six new patents in the Republic of China (Taiwan) (M579459, M572127, M548447) and China (ZL201920131476.7, ZL201822084353.0, ZL201720890068.0). It has also been transferred to domestic manufacturers for commercial production, providing food producers with equipment for producing various types of products. FIRDI has used this technique to develop an instant rice product that can be ready to eat by microwaving for 3 to 5 minutes. This technology can heat the rice grains at a high-temperature short time (HTST) causing the rice grains to slightly expand in volume and develop a porous structure, achieving rapid rehydration of the ingredients and a consistent texture. This technology was awarded the Mr. J. T. Tsen's Memorial Patent Invention Award by the Taiwan Association for Food Science and Technology in 2018 and received the Gold Medal in the Taiwan Innotech Expo Invention (TIE) in 2022. Currently, this technology has been licensed and transferred to four domestic food manufacturers and two machinery manufacturers, two production-scale equipment, and three types of instant rice products have been launched. Through technological advancement and machinery development, convenient and fast-to-consume cuisine may become a part of daily eating habits and this technology can be combined with "self-heating foods" and " cooking vending machines".
