Food process technology application of banana resistant starch-production of banana fish snack technology transfer
In recent years, banana prices have collapsed and oversupply, cause banana processing application requirements to increase. Therefore, through the process technology can extend the shelf life and value of crops. In order to develop a diversified commodity, the green bananas rich in resistant starch was used in this study, that combines agriculture and aquatic product processing technologies to develop the aquatic snack food. We use the banana as a starch source to replace the starch which is used in formula aquatic snack foods. Furthermore, baking and seasoning (original, chili, and black pepper) make aquatic snack foods. In study demonstrated the frozen banana pulp can application in the aquatic snack foods production and mass production process, increase the processing and utilization of crops, and value of aquatic products, that would be developed to diversified commodity in the future.
